My son brought this delightful burdock root side dish to my attention. It’s Japanese and translates to braised burdock root. I modified the recipe to be fish and soy free. The sweetness of the carrots complements the earthy flavor of the burdock, and it’s a wonderful way to bring more of these valuable roots into the diet. Adjust the level of heat to suit your personal preference by increasing or decreasing the amount of Sriracha sauce used.
