Jamie's Potato Skillet Pie
Jamie grows enough potatoes each year to harvest approximately 100 pounds –– we store them in a cool, crawl space and enjoy them well into the following spring. Needless to say, we eat a lot of potatoes! Not only does my husband grow an abundance of potatoes, he also created this recipe. It’s one of my favorites and can be served for breakfast, lunch or dinner. Pairs well with my romesco sauce recipe, and other recipes in the “Sauces, Cheeses, Dips, and Dressings” section.
