I recently discovered the concept of potato waffles! They’re basically hash browns cooked until crispy in a waffle iron. Tarragon adds a hint of anise and pairs very well with the potatoes in this recipe. For a spicy kick, try serving with a dollop of my Saucy Sriracha Tahini or other dressings in the “Sauces, Cheeses, Dips, and Dressings” section.
