Nana's Stuffed Artichokes
My late mother-in-law introduced me to stuffed artichokes over 30 years ago; she always served them on holidays. They are actually flower bulbs — before they blossom. Eating artichokes dates back at least to ancient Greece and Rome; kudos to the first person that figured out how to cook and eat the barbed petals and coveted inner heart! Not only are artichokes unusual and interesting, this thistle vegetable is also delicious and packed with nutrients and antioxidants.
