Faux Chicken Salad
This faux chicken salad was an immediate hit the first night I made it! My husband said, “Don’t change the recipe, it’s already perfect” and I agreed. The omnivore variation includes adding a bit of diced chicken, but honestly it may not be necessary. Serve on a thick slab of garden tomato, a bed of arugula or other greens. It’s also great on toast, in a wrap, or stuffed in a pita.
