Trilogy Flatbread Pizza
This recipe ditches the wheat flour and dairy cheese for a healthy and delicious pizza variation – with a trilogy topping of mushrooms, onions, and peppers. I suggest using a cast iron pizza pan and a super hot oven for best results. Alternatively, use a round pizza stone with handles. An aluminum pizza pan isn’t the best choice; the high oven temperature means you can’t line it with parchment paper. The high oven temp is also why this recipe calls for avocado oil, which has a higher smoke point than olive oil.
