When my daughter was training to be a professional ballet dancer in NYC, she dated a fellow dancer from Israel. He introduced us to Sabich, traditional middle eastern street food; pita stuffed with fried eggplant, hummus, hard boiled eggs, and Israeli salad. This is my wheat-free, plant-based version. Note the eggplant is roasted instead of fried. I like to serve it with homemade Potato Hummus Flatbread, or Sami’s Bakery millet flax pita.
