Lentil Balls

Even Nonna would approve! Serve with homemade marinara sauce and either rice, chickpea, or zucchini pasta for a healthier version of spaghetti and meatballs. But these versatile Lentil Balls aren’t just for Italian night! You can also enjoy them in a lettuce wrap or pita with my Spicy Peanut Dressing recipe. Or form them into patties, if preferred, and serve with other dressings in the “Sauces, Cheeses, Dips, and Dressings” chapter.

This is the lentil ball batter. I use a chef's knife to cut it into 8 equal pieces. This trick also works well for veggie burger batter, falafels, etc.
